Travel photography is all about the landscape, architecture and people of a place; after your trip, why not capture your experience in a printed photo book that documents a sense of place?

The way they look and dress, the way they carry themselves, the lifestyle they live and the customs they observe. Is there a particular piece of clothing that defines them? Or maybe a certain characteristic. For example, if they are known to be happy and smiling people, show them as such. If they are known to be hardworking, try to include some shots of workers.
